I made borscht this weekend. Kinda hard to do that without beets.

(We got very nice beets from the CSA farm truck.)

I think I'm trying to destroy my clothes today. I had blueberries for breakfast, borscht for lunch, and now I'm having red cabbage slaw as a snack. Thus far, I have avoided staining my pants purple, but I seem to be tempting fate.

You could try yellow beets - maybe less risk of staining? I had a cold beat salad at a restaurant the other night. It had red and yellow beets and goat cheese (I know, not a favorite of yours), and the young leaves from beets, too. It was beautiful and delicious!

sheesh. I corrected 2 incidences of misspelling "beet", and still got one wrong. Must be something subliminal going on there.

Anyway - the rest of the meal was large fried squash blossoms stuffed with ratatouie (and I don't know how to spell that) - very creative.

I love ice-cold Borscht, -- with bits of 'Detroit Red Beets' -- both Russian and Ukrainian style, with big globs of Sour Cream (Smetana) floating upon... (that's part my ancestral heritage expressing itself)

Best thing in the Summer! (especially now, here in Palm Springs where I am giving a presentation at a retreat... hee, hee, 107 degree's in the shade! 13% humidity, I cannot get my hubby off the damn Golf Courses!!!! -- So named by some Spanish explorer in the 17th Century as a place like being in: "la Palma de la Mano de dios" - "The Palm of God's hand".
