Keeping the dairy farmers of American in business

I realized this morning that the dinner we're serving the gaming group involves five different kinds of dairy (assuming there's no powdered milk or buttermilk in the bread Chuckro's making, which I'm not sure of). We're having borsht, with sour cream, so that's one. But I also made a brandy Alexander mousse cake (featuring brandy and white chocolate mousse in an Oreo crumb crust), that involves whole milk, heavy cream, mascarpone cheese, and butter. I guess really we should have done a yogurt-based bread, since I'm having trouble coming up with any other forms of dairy that could go in this meal. (Mascarpone can represent the great cheese family for these purposes, I think.)

Unfortunately, the bread is a bohemian black bread, so the only dairy in it is butter.

Clearly we did not plan this sufficiently to use the ENTIRE dairy case.
