So King Arthur Flour's "Perfect Pizza Flour" blend does indeed make the perfect pizza.
If you're optimizing for upscale frozen Elio's.
Should have known better than to trust New Englanders' idea of pizza.

In its defense, I made the dough using the bread machine; it may come out better (less fragile, easier to get thinner) if I knead it by hand. Also, the flavor was pretty decent.
