I'm going to stop resisting the onset of cooler weather. So it's fall? Then it's time for apple pies.

Which means it's time for attempt #2 at the bacon apple pie.

This one is signficantly more subtle. An apple tart, actually, on a crust with cheddar cheese baked in and a little of the butter replaced by bacon fat. There's a light dusting of crumbled bacon mixed with crushed almond brittle around the rim. This is a gorgeous, gorgeous tart. We'll see how it tastes tonight.

Well, not on this one. It's not perfect enough - I left the one section un-nutted for sparticleman, so it's not symmetrical.

Ok, wait until you see this tart. Seriously, if it wasn't for the section without the nuts, it looks like it could have come off a Williams-Sonoma page. This is one of the prettiest desserts I've made in some time.
