Another goal for 2011: learn to make caramel that is neither an evil bubbling black liquid producing roiling clouds of acrid smoke and waiting to jump out at unsuspecting passersby or a sticky crunchy destroyer of fillings.
o_O My experiment in caramel involved ginger and was entirely by accident as I left the syrup on the stove for several hours on low without realizing it was out of water.
