This winter, we've been experimenting with vegetables we hadn't had before. Turns out that we both quite like parsnips.

Just did roasted beets and turnips (not in the same pan). I always hated beets when I was a kid, and I've never had turnips. I actually quite like both now. Chuckro was iffy on the beets and not so happy with the turnips at all. That's ok - the turnips were fun for variety, but they're definitely not something I'd want all the time. I'm perfectly content to remove them from the menu once more.

I have not ever had parsnips.

Love beets, but haven't found a great recipe for them. Fortunately I like them just fine boiled/steamed/roasted, unembellished.

You should try parsnips - they're kind of like carrots, but a little earthier.

We had a nice salad at a restaurant that paired beets with goat cheese - that worked well.

We discovered parsnips just last year. So tasty!
