The perils of leafy greens

In our CSA bag this week, we got collards and beet greens and kale and lettuce. Plus a bunch of other stuff. Frantic to figure out how to make all the leafy greens fit into our week, I suggested a (in retrospect, ill-advised) kale and bacon quiche. Which took a lot longer to make than I'd quite realized. It smelled fantastic, but didn't come out of the oven until 11:30 last night. (We'd already had dinner--this was intended to be dinner tonight when Chuckro has class and doesn't have time to cook.)

So anyway, this is why we're having salads at multiple meals a day, plus a kale quiche for dinner, plus wilted collards and beet greens. I think we're eating fried green tomatoes with leftover black beans for breakfast tomorrow, because I don't know when else we're going to eat them.

I really wish I had more beet greens. I did a beet green and pickled beet salad with blue cheese the other day that was so good, I'm craving more.

Slice pickled or roasted beets onto beet greens, top with sprinkled blue cheese. Or add some blue cheese dressing if you want to go for the creamy. SO good, and so fast and simple.

I didn't get to the greens (I ate my lunch salad late) but the kale and bacon quiche came out really well. It was delightful and will hopefully remain that way for tomorrow's lunch.
