The perils of leafy greens
Jul. 13th, 2011 12:07 pmIn our CSA bag this week, we got collards and beet greens and kale and lettuce. Plus a bunch of other stuff. Frantic to figure out how to make all the leafy greens fit into our week, I suggested a (in retrospect, ill-advised) kale and bacon quiche. Which took a lot longer to make than I'd quite realized. It smelled fantastic, but didn't come out of the oven until 11:30 last night. (We'd already had dinner--this was intended to be dinner tonight when Chuckro has class and doesn't have time to cook.)
So anyway, this is why we're having salads at multiple meals a day, plus a kale quiche for dinner, plus wilted collards and beet greens. I think we're eating fried green tomatoes with leftover black beans for breakfast tomorrow, because I don't know when else we're going to eat them.
